The ingredients needed to make Tomato Curry:
  1. Make ready medium tomatoes chopped
  2. Prepare potatoes boiled & peeled
  3. Make ready Salt
  4. Take sugar
  5. Prepare garam masala powder

  9. Get Tempering:
  10. Make ready Bay leaf,cloves,cardamoms

  15. Get Turmeric, red chilli and cumin powders Ginger-garlic paste, 2 tablespoon water
Steps to make Tomato Curry:
  1. Heat the oil in a wok
  2. Add the tempering ingredients one by one and wait for the seeds to splutter
  3. Once done, add and sauté the onions until translucent
  4. Meanwhile create the slurry and keep it ready
  5. Once onions are done, add the slurry and cook covered until oil separates
  6. Then add in the tomatoes followed by salt. cook covered until they turn mushy
  7. Once almost done, roughly mash the potatoes and add them now
  8. Mix well and add some water good enough to bring the gravy to desired consistency
  9. I like my curry dry, so it took roughly 10 minutes to cook.
  10. To finish, add a dash of sugar, coriander leaves and garam masala powders(add a dash of kasuri methi for that extra flavour, if desired)
  11. Mix well and take off heat.
  12. Serve our lovely tomato curry with pooris, chapatis, parantha, etc. Enjoy!
